VEGAN WALNUT CAKE WITH LEMON GLAZE

First chop the walnuts and let the Miss Grey leaf tea brew and cool down according to the instructions.

Put all ingredients - except the icing sugar and the lemon - in a bowl and mix into a smooth dough.

Place the dough in a small square cake tin and bake in a preheated oven at 200°C for about 25 minutes. After the time has expired, use a toothpick to check whether the dough in the middle is fully baked.

In the meantime, mix the icing sugar with the lemon juice to form a thick mass. Coat the cooled cake evenly with the mixture. If you want to decorate your cake, use chopped walnuts as decoration.

Top Tip! The cake tastes better if its been left in the fridge overnight.
