Crunchy green tea rolls

Mix the ingredients for the pre-dough and cover with cling film. Leave to rise overnight at room temperature.

The next day, mix both flours, the remaining ingredients and the pre-dough with the Mandarin Spring and knead well. Cover the dough and let it rise for 1 1/2 hours.

Divide the finished dough into approximately 8 equal parts. Form the pieces into rolls and place them on the tray covered. Leave the dough pieces to rise for 1 1/2 hours.

Put on a pot of water. Cut the buns as you like, and briefly hold them in the steam of the boiling water. Bake in the oven for about 20 minutes.

Then bake in a preheated oven at 220°C for about 20 minutes until golden brown.
