Roi's Christmas Cookies

recipe for christmas cookies with roi lemon


Ingredients for Servings

  • 5 teaspoon Roi Lemon
  • 300 g flour
  • 1 pinch of salt
  • 175 g Butter or Margarine
  • 100 g sugar
  • 1 sachet of vanilla sugar
  • 1 egg
  • 1 g rated organic lemon

Everyone loves biscuits with their tea...so why not combine them? We have created a Christmas cookie recipe where you can literally taste the South African sun! The lemony tea combined with the short pastry of the crispy biscuit make for a festive favourite!

  1. Knead all ingredients into a shortcrust pastry.

  2. Let the dough rest in the fridge for about 30 minutes.

  3. Now roll out the dough to a thickness of 0.5 cm.

  4. Using a cookie cutter, cut out about 20 biscuits and carefully place them on a baking tray lined with baking paper.

  5. Then bake in a preheated oven at 180°C for about 10 minutes.
